Paul's Story

It all started back in 1957, when Paul and Katina Zerefos, purchased a block of land at 12 Princes Hwy, Sylvania. It was previously owned by Bill Dalton, who operated the premises as a fruit store.

pauls_7 Paul began to build a mini market, as this was long before there were any shopping centres in the area. As the building progressed, it was under Katina's instructions to the builders to measure 7 feet from the side wall of the building, in order to put a dividing wall, separating the work area in to two. At completion, there was a mini market/milkbar on one side,and a burger shop on the other. Within the 7 foot opening, service was conducted at the front of the shop, servicing directly to the public on the street. The entire business combined was called Paul's. Katina then set about devising "Her Hamburger". This was to be a lovely seedless bun, lightly floured on top, plenty of fresh lettuce and tomato, and of course the meat patty with onions and tomato sauce. The extras at the beginning were egg and bacon, later came the cheese and pineapple, Beetroot was not an option at this time as Katina found it would stain her white benches.

Hamburgers were the only product to come out of - what became known by locals as the "hole in the wall". This story_shopfrontallowed Katina and her children, Helen, Bill and their two late sisters Bubsie(Florence) to specialise in the production of hamburgers. As the business became famous and people came from all over Sydney for them, the establishment was re-named Paul's Famous Hamburgers. As it turned out, Paul himself was never to make a hamburger. As the business size increased, so did the product line, expanding the menu to old fashioned milkshakes, hot chips and Paul's signature freshly squeezed pineapple crush. So if the burger didn't fulfill your appetite, the refreshing pineapple pulp certainly would!

THURSDAY, & FRIDAY - 11:30am - 2:30pm & 5:00pm - 9:00pm
SATURDAY & SUNDAY - 11:30 - 3:00PM

Bill and Marie carried on the tradition, until 1998, after 41 years in the family, Paul's Famous Hamburgers was sold to Nick and Sandra Sinesiou. With 30 years experience in the food industry, the Sinesiou Family had no problems continuing the systems, of what had become and institution. The high level of cleanliness, customer care, product quality and production line like service, was the foundation and success of the business. The takeover was such a success, that after 5 years trading, Nick decided to trial extending the hours on weekends until 4pm. This was due to regrettably closing the door on queues of customers. As this agreed with the customers, the hours extended until 8pm. Tables and chairs were also introduced giving customers the option of eating outside the premises, or continuing the Paul's culture by walking a short distance to eat and relax facing the George's River, under Tom Ugly's Bridge.
